Organic Farming in California — State Guide for Growers
California grows more certified organic acreage than any other US state — and the market infrastructure to match. With premium farmers markets in every major metro, strong institutional buyers, and state programs that actively support organic transitions, California remains the best-resourced state for organic growers at every scale. Understanding how state and federal programs interact here is essential before you invest in land or infrastructure.

Key Growing Regions
California’s geography creates distinct organic opportunities across its regions:
- Salinas Valley (Monterey County): The “salad bowl of the world.” Dominated by lettuce, spinach, and brassicas. Cool coastal climate allows year-round production. Organic premiums are strong here, but land costs are high and competition is intense.
- Central Valley (Fresno, Tulare, Kings): Tree fruits, almonds, grapes, and processing tomatoes. Water cost and availability are the primary risk factors. Drip irrigation is effectively mandatory for economic survival.
- Sonoma and Mendocino: Wine grapes, small fruits, and pasture-based livestock. Strong organic wine market drives premium prices. Smaller farm scale with strong direct-to-consumer channels.
- San Diego and Ventura: Year-round mild climate supports avocados, citrus, and specialty vegetables. High land values push producers toward high-value crops and direct sales.
CDFA Organic Program
California’s Department of Food and Agriculture (CDFA) runs the California Organic Program, which operates alongside the federal NOP. California was the first state to pass an organic foods act (1979), and the state program adds some California-specific requirements to the federal baseline. Registration with CDFA is required in addition to federal NOP certification — it is not a substitute. The annual CDFA registration fee is modest (under $100 for most small farms) and is processed through your county agricultural commissioner’s office.
Farmer's Tip
Water Efficiency Programs
California’s chronic drought conditions make water management a compliance and survival issue. The SWEEP (State Water Efficiency and Enhancement Program), administered by CDFA, provides grants of $10,000 to $100,000 for drip irrigation, soil moisture monitoring, and irrigation scheduling tools. Applications open annually — check the CDFA website in late summer. CalRecycle’s Organics Grant program funds on-farm composting infrastructure, which builds soil water-holding capacity and reduces irrigation demand over time.
CCOF Certification
California Certified Organic Farmers (CCOF) is California’s home-grown certifying agent and one of the largest in the country. Beyond certification, CCOF provides education, advocacy, and a marketplace connection service. For new California organic farmers, CCOF is often the first call — their staff understands California-specific input availability, regional certifier relationships, and state program interactions.
Farmers Market Premium Opportunity
Bay Area farmers markets (Ferry Plaza, Grand Lake, Marin Civic Center) and Los Angeles markets (Santa Monica, Hollywood) consistently generate the highest per-pound organic premiums in the country. Certified organic salad mix regularly sells for $14–18/lb at these markets. Heirloom tomatoes, dry-farmed crops, and specialty herbs carry similar premiums. Booth wait lists at top markets are 2–4 years — apply early and build relationships with market managers.

High-Value Specialty Crops
California organic growers with 5 acres or less often find the most profitable path through specialty crops: strawberries (highest gross revenue per acre of any organic crop), wine grapes under organic/biodynamic certification commands 15–30% price premiums from premium wineries, and lettuce mix for restaurant accounts. Almonds present a longer time horizon (5 years to first crop) but strong export demand supports certified organic premiums of 30–50% over conventional.
